Mincemeat puff swirls
Background
It's very handy to have a pack of ready-rolled puff pastry in your fridge or freezer during the winter festivities, as you can make quick & easy nibbles, snacks and treats. These mincemeat puff swirls are a good example. I found the recipe in a Tesco magazine and I happened to have all the ingredients, so I made these little treats for afternoon tea - they are absolutely scrumptious, the best easy baking I've done in a long time - though I did use homemade mincemeat which could have given it the x-factor!
Ingredients
- 100g dried cranberries
- 100g pistachios (plus extra for garnishing)
- 150g mincemeat
- 1 tsp ground cinnamon
- 2 Tbsp honey
- 1 pack of ready rolled puff pastry
Instructions
- Roughly chop the pistachio and dried cranberries, put aside 1 Tbsp of each for garnishing.
- Mix the rest with the mincemeat, honey and cinnamon.
- Roll out the puff pastry on a lightly-floured surface. Spread the mincemeat evenly all over the pastry, then roll it up tightly like a Swiss roll. Wrap it tightly in clingfilm, then rest in the freezer for 20 minutes.
- Preheat the oven to 200Β°C. Remove the roll from the freezer and cut into 1 cm slices. Place these on a lined baking tray, spaced well apart, as they'll expand. Bake for about 15 minutes until golden.
- Sprinkle the swirls with the reserved cranberry and pistachio pieces, leave them to cool.
- Dust with icing sugar just before serving.
Tips
- You can use other dried fruits too - figs, apricots & cherries would all work well.
- Use dairy-free puff pastry if milk is an issue for you!
- If you don't have pistachios - just use almonds, hazelnuts or walnuts.
