Background
These mincemeat snowballs are perfect using up leftover mincemeat. You can nibble on them during the festivities - or they make lovely presents or New Year ‘s Eve party snacks. I always make them with home-made mincemeat, but you can easily jazz up the shop bought one with some (almond, cherry or orange) liqueur, orange zest and chopped nuts. You can use gluten-free pastry too. These treats are vegan, if dairy-free pastry and mincemeat are used.
Ingredients
- I ready rolled puff pastry (gluten-free if needed)
- Good quality Mincemeat
- Icing sugar
Instructions
- Preheat the oven to 180°C.
- Roll out the pastry.
- Using a round cookie cutter or a drinking glass, cut out circles (about 8cm diameter).
- Drop a small spoonful of mincemeat in the middle.
- Wrap the mincemeat with the pastry creating ball shapes.
- Put the balls on a baking tray lined with parchment paper - the even side facing upwards. Brush them with egg wash if you want the pastry shiny and crispy.
- Bake for 10-12 minutes, or until light brown, then let them cool on a wire rack.
- Roll them in icing sugar (you can mix in some cinnamon, if you like) and serve.
