Mincemeat star cookies

Background
You can make many different types of Β treats with mincemeat such as these mincemeat star cookies (see more recipes with mincemeat here>>). I used ready rolled shortcrust pastry, but feel free to make your own special pastry, which can be vegan or gluten-free too.
Ingredients
- 1 pack sweet short crust pastry
- Β½ jar mincemeat ( approx.)
- 1 tsp Cinnamon powder
- 1 Tbsp Icing sugar
- Icing sugar, to dust
Instructions
- Preheat the oven to 180Β°C.
- Mix the cinnamon powder with icing sugar and dust the pastry with this. Spread some mincemeat all over the pastry.
- Turn the pasty over and flatten it with a rolling pin into a thin, about 3 mm thick, pastry.
- Using a cookie cutter, cut out star shapes.
- Put these on a baking tray, lined with parchment paper.
- Bake in the oven for 10-12 minutes, or until golden.
- Let them cool, then dust with icing sugar just before serving.
