Background
These mixed berry pancakes are scrumptious yet so easy to make! You can use mixed berries or fruits of the forest or your own mixture of berries.Β It's a perfect dessert for pancake day, Valentineβs day, Motherβs day and anniversaries. For a more luxurious version add some whipped cream or syllabub.
Ingredients
- 1Β cup self-raising flour
- 1 egg
- 1 cup milk or plant-based milk
- 1 tsp vanilla essence
- 1 tsp sunflower oil
- 1 cup mixed berries
- For the compote:
- 200g frozen mixed berries
- 1 Tbsp vanilla essence or 1 tsp vanilla paste
- 2 Tbsp muscovado sugar
Instructions
- Put the flour in a large bowl and add the egg and milk. Stir until well combined then rest for 10-15 minutes, if time allows.
- Lightly oil a non-stick frying pan over medium heat. Add dollops of the batter to the pan then sprinkle them with mixed berries. Spoon a little more batter on top to cover the berries. Cook for a minute until the surface is no longer runny, then flip them over and cook for another minute or so.
- When they are golden on both sides, transfer them to a plate and cover with foil. Repeat with remaining batter and mixed berries.
- Meanwhile, put most of the berries in a small saucepan. Add the vanilla paste and sugar then place the saucepan on the hob over low heat and cook for about 8 minutes, stirring regularly, until you get a thick, syrupy compote.
- Serve the pancakes with the compote drizzled over them.
