Background
I like making my own marinated olives because they are much cheaper and much more tasty than the ready-made versions sold at grocery stores - and yet they're so easy to prepare! These mixed olives with feta cheese go superbly with grilled lamb or chicken, or they make an excellent filler in pita. Alternatively, serve them as appetisers or nibbles with a glass of vino. They are perfect for summer picnics, parties and trips too!
Ingredients
- ½ cup black or Kalamata olives (pitted)
- ½ pitted green olives
- 2 garlic cloves, thinly sliced
- Grated zest and juice of 1 lemon
- 2 Tbsp olive oil
- ½ tsp dried oregano
- Couple of pinches of dried chilli flakes (optional)
- 50g feta cheese
- 1 Tbsp chopped fresh parsley
Instructions
- Mix the olives and garlic in a bowl.
- Combine the lemon juice & zest, oil, oregano and chilli flakes in a small bowl then pour over the olives and garlic. Season with salt and pepper. Combine well and chill for at least an hour, if possible overnight.
- Just before you’re ready to serve, dice the feta and chop the parsley. Add these to the marinated olives. Gently combine and transfer to a serving dish.
- Serve with toasted pita bread on the side (if you like).
