Background
These Moroccan-style BBQ chicken thighs are perfect for a barbecue party or to take with you onΒ a picnic. Serve them with couscous or flatbread and a crunchy salad. If you'd like them spicier, use half a teaspoon less paprika replacing it with cayenne pepper.
Ingredients
- 7-8 chicken thighs (about 800g)
- 1 Tbsp olive oil
- Juice of ½ a lemon
- 2 tsp paprika
- 2 tsp ground cumin
- 1 large garlic clove, minced
- ¼ tsp cinnamon
- ½ tsp salt and pepper
Instructions
- Mix the ingredients together.
- Put the chicken legs in a shallow dish or in a freezer bag and pour over them the mixture. Rub in the marinade and leave to rest or chill for at least half an hour, longer if you can.
- Meanwhile: preheat the BBQ or grill
- Cook the chicken over medium heat until the skin is crispy & golden. Make sure it's cooked through with no pinkness.
- Serve warm or cold.
