Background
This salad can be made in just 5 minutes, so it's a brilliant nibble for guests who pop in for a drink or an excellent appetizer at a dinner party. But you can also make it for a quick brunch or lunch - just fill a pita or flatbread with it. Also, it's a lovely salad to take to a picnic to share.
Ingredients
- 2 bags of mozzarella balls (bocaccini)
- 75g semi-dried tomatoes in oil
- 1 small handful of parsley
- 1 tsp olive oil
- Salt & pepper
Instructions
- Chop the parsley. Drain the tomatoes, then cut into small, bite-size pieces.
- Drain the mozzarella balls, put them in a serving dish.
- Add parsley, tomatoes, oil and season with salt and pepper.
- At parties serve with toothpicks or cocktail sticks.
