Mozzarella, cucumber and tomato bites

Background
If you need a quick and easy snacks with your aperitif or some nibbles for a party, try these mozzarella, cucumber and tomato bites. They are incredibly easy, tasty and can be prepared well Β in advance. They travel well too (in a sealed container) so are ideal for picnics, trips or just for your everyday lunchbox.
Ingredients
- 20 mozzarella balls
- 20 cherry tomatoes
- 5 mini cucumbers
- 1 clove of garlic, minced
- juice and grated zest of 1 lemon
- 2 Tbsp olive oil
- 2 Tbsp chopped chives or dill
- 20 cocktail sticks or mini skewers
Instructions
- Drain the mozzarella balls and put them in a large mixing bowl.
- Wash, wipe, then cut the cucumber into 4 chunks, then add to the bowl.
- Wash and wipe the tomatoes, then add to the bowl.
- Add the minced garlic, lemon juice and zest, oil and herb. Season to taste with salt and pepper.
- Combine everything. Chill for at least an hour before serving, turning a few times.
- Taste, adjust the seasoning and lemon juice to your liking.
- Thread one cucumber piece, one mozzarella ball and one tomato onto each stick.
- Put the skewers on a serving platter. Pour any remaining marinade over them and serve.
