Mushroom and leek parcels
Background
Whether youβre on a vegan, vegetarian or generally healthy diet - or just want a nice veggie side dish to go with your meat - these mushroom and leek parcels wonβt let you down. I made Β the dish with dried oregano, but feel free to use fresh herbs such as thyme, oregano or rosemary. As a main dish, serve with baked potatoes or rice.
Ingredients
- 2 leeks
- 150g mushroom
- 2 cloves of garlic
- 1 tsp dried oregano or thyme
- 4 small knobs of butter or dairy-free spread
- Salt & pepper
Instructions
- Preheat the oven to 200°C.
- Finely chop the mushrooms and garlic. Slice the leeks. Mix them together with the oregano and some seasoning.
- Prepare two large square sheets of foil or parchment paper. Divide the mixture onto the middle of the sheets. Crumble some soft butter or spread over them, then fold in the sides, then wrap up, creating tight parcels.
- Put the parcels on a baking sheet and bake for 35 minutes.
- Carefully unwrap the parcels and serve warm.
