Okra and red pepper fry

Background
This vegan okra and red pepper fry is super easy to make and will change your mind about okra, as itβs not slimy! Serve it as snack or part of an Indian menu. Perfect for parties too!
Ingredients
- 1 pack fresh okraΒ (about 175g)
- 3Β Tbsp vegetable oil
- 1Β onionΒ
- 1Β teaspoon blackΒ cumin seeds
- 1Β red bell pepperΒ
- 1 small red chilli, deseeded
- 2 cloves of garlic
- 1 inch gingerΒ
- ΒΌΒ teaspoonΒ turmeric powder
Instructions
- Rinse and dry the okra, then slice them into rounds.
- Finely chop the onion, garlic, chilli and ginger.
- Cut the pepper into small cubes.
- Heat half of the oil in a pan over medium-high heat.
- SautΓ© the onion for 5 minutes, then add the cumin seeds and once they begin to splutter, add the chilli, garlic and ginger.
- Add the remaining oil and the okra, salt, pepper and turmeric. Stir-fry for about 8 minutes or until the okra is dry and crispy and no loner slimy.
- Serve warm.
