Omelette with cheese and Parma ham

Background
This super easy Italian-style omelette with cheese and Parma ham is perfect for weekend breakfasts or brunches. Instead of spring onion, you can use capers, sun-dried tomatoes or olives. Serve it with toast and a balsamic tomato saladΒ on the side.
Ingredients
- 3 medium eggs
- 2 spring onions, chopped
- 3 slices of Parma ham
- 1 slice cheese (nutty)
- Basil leaves
- Oil for cooking
Instructions
- Whisk the eggs with a couple of pinches of salt and pepper. Add the spring onions.
- Lightly oil a frying pan, then put it on the cooker over medium heat.
- When hot, pour in the egg mixture, letting it spread out evenly.
- When it starts setting, put the cheese on one side of the omelette, the Parma ham on the other side. Cook for another minutes or so, then scatter some basil or parsley leaves and fold the omelette in half.
- Cook for another minute, until the cheese starts oozing out.
- Serve immediately.
