Orange & almond cupcakes with marzipan

Background
These orange & almond cupcakes with added marzipan and almond liqueur are fantastic sweet treats for special occasions - such as Mother's day, wedding, anniversaries, Valentines' day, Christmas or perhaps Easter. Serve them with a cup of tea or a glass of fizzy.
Ingredients
- 150g marzipan
- 50g butter
- 200ml buttermilk
- 2 eggs, lightly beaten
- 2 Tbsp almond liqueur (Amaretto)
- 1 orange
- 200g flour
- 1 tsp baking powder
- Almond flakes
Instructions
- Preheat the oven to 180°C .
- Cut the marzipan into small cubes.
- Melt the butter, then let it cool down. Add the buttermilk, eggs and liqueur. Grate and add the orange zest.
- In another bowl sift the flour and baking powder, then add the egg mixture. Stir until smooth, then gently fold in the marzipan pieces .
- Spoon the batter into lined muffin tin or silicon cases.
- Sprinkle with almond flakes, and bake for about 20 minutes until light brown.
- Transfer to wire rack to cool.
