Orange quinoa with sultanas

Background
This orange quinoa with sultanas makes a really healthy breakfast or brunch. It can be served warm or cold, so you can take with you to work, school or picnics.
Ingredients
- Β½ Tbsp olive oil
- zest of 1 lemon (unwaxed)
- Β½ cup quinoa
- 1Β½ cup orange juice
- 2-3 Tbsp raisins
Instructions
- Heat the oil in a heavy - based saucepan. Add the grated lemon zest and quinoa. Stir for about 1 minute.
- When lemon fragrance is strong, stir in the raisins, then pour over the orange juice. Bring to the simmer and cook at low temperature until the juice is absorbed by the grains - this should take about 15 minutes . Stir occasionally.
- Rest under cover for 5 minutes before serving.
