Palak Paneer (Spinach and Paneer)

Background
Palak paneer is a famous Punjabi dish. It is a combination of paneerย and spinach. Paneer is a kind of cottage cheese made from milk. It is readily available in any grocery store. It goes well with roti.
Ingredients
- 200g or 250g of Spinach (Washed thoroughly)
- 2 onions (chopped)
- 1 Tomato (Chopped)
- 1" Ginger (Chopped)
- 2 Garlic cloves
- 1 Green chilli
- 1 tsp Red chilli powder
- ½ tsp Turmeric
- Salt as required
- 1 tsp Cumin seeds
- A pinch of Garam masala
- 1 tsp Cream
- 1 Tbsp Butter
- Water as required
- 200g Paneer (Cubed)
Instructions
- Wash the spinach thoroughly. Blanch it in water (use little water), then remove the leaves and run in cold water. Retain the water used for blanching.
- In a blender, blend together the spinach leaves, ginger, garlic and the green chilli together with the cooking water set aside.
- In a pan, heat the butter and add the cumin seeds. Let the cumin seeds splutter.
- Add the chopped onions and fry them until brown.
- Add the chopped tomatoes, turmeric and chilli powder and fry until the tomatoes are soft.
- Add the blended spinach to it and allow it to boil.
- Add the salt and panner to this and mix well until the paneer pieces are well coated with the spinach mixture.
- Add the cream and serve hot.
