Pan-fried greens with beans

Background
You can serve this pan-fried greens with beans and feta as a side dish with grilled fish, lamb or chicken. Alternatively, it can be served on a piece of toast for a vegetarian or vegan meal.
Ingredients
- 1 Tbsp olive oil
- 1 leek
- 1 small courgette
- 1 clove of garlic
- 1 cup shredded savoy cabbage or kale
- 1 tsp chilli flakes (optional)
- Grated zest of juice of a lemon
- 1 can cannellini beans, drained
- 2 Tbsp chopped parsley
- 100g feta (or plant-based alternative)
- Salt & pepper
Instructions
- Finely slice the leek and garlic, then cut the courgette into small pieces.
- Heat the oil in a large frying pan and gently sauté the leek for 5 minutes under cover. Add the courgette, chilli and garlic and cook for another 3 minutes. Add the cabbage and the lemon juice.
- Put the lid on and sauté for 3-5 minutes until the cabbage has softened.
- Add the beans and stir to warm through.
- Turn off the heat, add the lemon zest and parsley, then season to taste.
- Crumble the cheese or plant-based alternative on top, then serve.
