Panettone French toast bake
Background
If you have Panattone left over from Xmas, making French toast with them is a yummy way to use it up. This Panettone French toast bake can be made with milk, double cream or custard-depending on how rich you want it. Also,Β you can use jam, if you donβt have fresh berries. I made it with custard and raspberries - it was perfect for breakfast on Boxing day! It would make an ideal brunch on Valentineβs day too with a glass of bubbly!
Ingredients
- 300g panettone
- 100 ml thin custard or double cream mixed with ½ tsp vanilla paste
- 2 eggs
- 1 tsp cinnamon powder
- 1 cup fresh fruits (such as raspberry, cherry, blueberry etc)
- Icing sugar to serve
Instructions
- Preheat the oven to 190°C. Butter a baking dish.
- Whisk the eggs in a small bowl.
- Cut the panettone into 2cm thick slices, then dip them in the egg (on both sides) and layer them into the greased dish. Dust with the cinnamon and scatter the fruits on top. Pour over the remaining egg mixture.
- Pour over the cream or custard.
- Bake in the oven for 25-30 minutes, until golden.
- Dust with icing sugar before serving.
