Panettone with dates and pistachios
Background
Panettone is one of the most popular treats during advent and Christmas holidays. The home-made versions taste far better than even the top quality shop-bought ones. Also, you can add your favourite dried fruits and nuts, or you can make it dairy-free, gluten-free, sugar-free etc according to your diet. It’s really easy to make it in a bread machine, particularly if it has a brioche setting. This panettone with dates and pistachios is delicious, soft and makes a perfect gift too.
Ingredients
- 1½ tsp yeast
- 400g strong white flour
- 4½ Tbsp sugar
- 1 tsp Salt
- 50g butter or dairy-free margarin - cut into 2cm cubes
- 2 medium eggs, beaten
- 200 m milk or plant-based alternative – warmed to room temperature
- For later in cycle:
- 70g butter or dairy-free margarine - cut into 2cm cubes
- 25g chopped candied citrus peel
- 25g sultanas
- 50g chopped dates
- 50g chopped pistachios (unsalted)
Instructions
- Add the ingredients to the bread machine pan in the order listed - unless the manual of your machine suggests otherwise.
- Set the machine to Brioche setting, or the basic bread setting if you don’t have brioche setting.
- Machines with a Brioche cycle will beep to when to put in the extra butter, nuts & fruits. If yours doesn’t beep, then add them about 10 minutes before the end of the first kneading cycle i.e. about 60 minutes from starting.
- When the panettone is ready, carefully remove it from the tin to a wire-rack and let it cool completely before slicing it.
