Pasta with sun-dried tomatoes
Background
This easy pasta with sun-dried tomatoes is perfect on busy days when you don't have much time to cook. This dish is ready within 10 minutes, even less if you use gluten-free pasta. Talking of pasta, you can use any type, such as durum wheat, whole-wheat, gluten-free or fresh.The sun-dried tomatoes can be home made or come from a shop-bought jar. Serve it with a green salad.
Ingredients
- 200g pasta
- 6 sundried tomatoes( jarred in oil)
- 1 clove of garlic
- 1 roasted chilli pepper or ½ tsp dried chilli flakes
- ½ lemon, zested and juiced
- 1 large handful if basil leave salt and pepper
- To serve: grated Parmesan or mozzarella
Instructions
- Cook the pasta according to the pack instructions.
- Meanwhile put the sun-dried tomatoes, basil, garlic, lemon juice and zest in a small food processor.
- If you're using roasted chilli, remove the skin and the seeds and add too food processor (or add the flakes).
- Drizzle a drop of the oil from the jar. Whiz, until you get a coarse paste. Season to taste and add some more oil and lemon juice, if the paste is not moist enough.
- Drain the pasta, keep back 1Tbsp of the cooking water, add this to the paste.
- Toss the pasta with the paste and the cheese if used.
- You can serve this dish warm or at room temperature.
