Pasta with courgette and roasted garlic
Background
My pre-barbecued or roasted garlic comes very handy when I need to create super quick dishes such as this pasta with courgette and roasted garlic. I made it with fresh gluten-free pasta which takes just 2 minutes to cook. While the pasta was cooking, the courgette sauce was also made so the whole dish was ready in just 5 minutes! Obviously you can use other types of pasta - fresh or dried, just follow the instructions on the packaging.
Ingredients
- 200g of pasta of your choice
- 6 cloves of roasted garlic
- 1 small courgette
- Parmesan grated ( optional)
- Ground pepper
- To garnish: toasted pine nuts (optional)
Instructions
- Cook the pasta according to the packet instructions.
- Meanwhile, grate the courgette and squeeze the garlic flesh of the skin into a small bowl.
- Heat a Tbsp of olive oil in a pan and gently sautΓ© the courgette for acouple of minutes, then add the roasted garlic and stir until well combined.
- Drain the pasta, keeping a drop of the cooking water.
- Add the pasta and cooking water to the courgette. Great some Parmesan over it ( f used) and mix well.
- Serve with plenty of ground pepper and more grated Parmesan if you like. Also, you can scatter some toasted pine nuts on the to, if liked.
