Background
We all have days when there is nothing in the fridge to eat - on these occasions you stall can make a meal using cupboard products like this pasta with olives. Actually, this dish is quite popular in Southern Italy, where they like their pasta with a simple sauce.
Ingredients
- 200g pasta of your choice (gluten-free is ok too)
- 1 Tbsp olive oil
- 2 cloves of garlic
- Β½ tsp chilli flakes (optional)
- 1 tsp capers
- 1 Tbsp tomato purΓ©e
- 1 cup pitted green or black olives, drained (from jar)
Instructions
- Cook the pasta according to the packetβs instructions.
- Meanwhile, make the sauce. Slice the garlic, then heat the oil in a frying pan and fry it with the capers for a minute. Make sure the garlic doesnβt burn! Add the tomato purΓ©e, chilli (if used) and a few spoonful of the pastaβs cooking water. Season with salt and pepper, and cook for 5 minutes until you get a silky sauce. Stir in the olives for a minute, then turn off the heat.
- Drain the pasta and mix with the sauce.
- Serve immediately with Parmesan or plant-based grated cheese, if liked.
