Background
Idli is a healthy and tasty Indian breakfast. It goes well with any kind of chutney. It can be made with semolina (instant idli) but this recipe uses rice and urad dal. It's is very popular in South India.
Ingredients
- I cup urad dal
- 3 cups idli rice
- 1 cup rice (basmati)
- Salt as required
Instructions
- Soak the urad dal in water for 6 hours.
- Mix the two types of rice and soak in water for 6 hours.
- Grind the urad dal with very little water into smooth paste.
- Grind the rice smoothly by adding water little by little (it should not be very watery).
- Mix the ground urad dal, ground rice and salt together and leave it to ferment overnight.
- It is properly fermented when the batter doubles up.
- Steam the batter in an idli tray for about 10 minutes.
- Serve it hot with chutney.
