Pasta with spiced green peas and halloumi

Background
For a quick vegetarian lunch one of the easiest dish to create is pasta. This pasta with green peas and halloumi is ready within 15 minutes - it’s yummy, zingy and filling. I made it with gluten-free penne, but you can make it with your favourite pasta. Serve it with a crispy salad on the side.
Ingredients
- ½ block halloumi
- 1 garlic clove, minced
- ½ tsp chilli flakes
- 2 Tbsp olive oil
- 200g pasta of your choice
- 100g green peas, frozen or fresh
- For the dressing:
- 2 Tbsp chopped mint leaves
- 1 Tbsp extra virgin olive oil
- Juice and grated zest of ½ lemon
- Salt and pepper
Instructions
- Cook the pasta according to the packet instructions. Add the fresh peas to the cooking water for the last 3 minutes - the frozen peas for the last 5 minutes of the cooking.
- Meanwhile, cut the halloumi into 1.5 cm cubes.
- Heat the oil in a frying pan and brown the halloumi on all sides. This should take about 5 minutes. Add the chilli and garlic for the last minute of the cooking, then stir constantly.
- Turn off the heat, set aside.
- Mix the dressing.
- When the pasta and peas are ready, drain them and add to the halloumi, combine well. Add the dressing and toss again. Season to taste.
- Serve warm with plenty of freshly ground peppercorn.
