Pasta with sweet potato sauce and spinach
Background
Here is another super easy dish you can make if you have precooked pasta sauce. I used my spiced sweet potato and tomato sauce, which is enough for 2-3 meals. This pasta with sweet potato sauce and spinach is vegan, gluten-free (if appropriate pasta is used) and ready in just 10 minutes - perfect on busy or lazy days. I served it with crispy salad on the side.
Ingredients
- 200g pasta of your choice
- 100g spinach
- Salt& pepper
- Pinch of chilli flakes
- (Vegan) grated cheese, optional
Instructions
- Cook the pasta according to the packetβs instruction. Add the spinach for the last minute of the cooking.
- Meanwhile heat the pasta sauce in a shallow pan.
- When the pasta is ready, add a small ladleful of the cooking water to the sauce, then drain the pasta.
- Fold the pasta& spinach into the sauce, toss well.
- Season with plenty of freshly ground pepper and chilli flakes, if used, then serve.
- You can scatter some vegan or normal grated cheese on top, if you like.
