Pasta with tomatoes and halloumi

Background
This vegetarian, zingy pasta with tomatoes and halloumi is a perfect dish for lazy lunches. It's ready in no time, in fact you can make the sauce in the time it takes theΒ pasta to cook.
Ingredients
- 400g dried pasta
- 250g tomatoes on the vine
- 1 Tbsp olive oil
- 1 red onion
- 1 clove of garlic
- 1 red chilli, deseded
- 250g halloumi
- 1 tin of cherry tomatoes
- 1 Tbsp chopped oregano or Greek basil leaves
Instructions
- Chop the onion, chilli and garlic. Cut the cheese into 2 cm cubes.
- Heat the pan and add the fresh tomatoes. Cook for 4-5 minutes, until they soft, then transfer them to plate.
- Pour the oil into the pan, and fry the chopped chilli, garlic and onion. When they soften, add the cheese cubes and cook until they are golden on all sides. Add the tinned cherry tomatoes, then cook for 2-3 minutes.
- Add the chopped herbs and the other tomatoes, then heat through for a minute.
- Season with salt and pepper, then mix thoroughly. Rest under cover.
- Meanwhile cook the pasta according to packaging instructions, then drain. Serve with the tomato sauce.
