Pasta with vegan feta and dill
Background
In Eastern Europe cottage or curd cheese pasta is a very popular dish, particularly amongst children. It can be served as a dessert with icing sugar and raisins or as a savoury dish with bacon or herbs and veggies. This pasta with vegan feta and dill is my version - the kids loved it! Vegetarians can use real feta and gluten-free pasta is suitable too.
Ingredients
- 200g pasta of your choice
- 100g vegan feta cheese
- Juice and grated zest of ½ lemon
- 1 Tbsp maple syrup
- 2 Tbsp chopped dill
Instructions
- Cook the pasta according to the packet instructions.
- Drain, then then put it in a serving bowl. Crumble the feta over it, add the maple syrup, lemon zest & juice and dill.
- Combine and serve immediately or let it cool and serve at warm temperature.
