Background
It's so easy to create homemade hummus, yet we keep buying it from grocery stores! A good example is this herby pea & mint hummus which is much more tasty and interesting than anything you get in a supermarket! And it takes only a few minutes to whiz it up! Serve it with crudités and /or toasted pitta bread.
Ingredients
- 250g green peas
- 2 cloves of garlic
- 1 Tbsp extra-virgin olive oil
- zest and juice of 1 lemon
- 1 tin chickpeas (400g) drained
- 2 Tbsp tahini paste
- 1 handful mint leaves, roughly sliced
- 1 handful of chives or basil, chopped
Instructions
- Blanch the peas in a pan of boiling water for a couple minutes then drain and rinse under cold water, then drain again. Put a handful aside.
- In a food processor, whizz the remaining peas with the chickpeas, garlic, oil, lemon zest & juice, tahini and herbs, until you get smooth but slighly textured paste.
- Season with salt and pepper to your liking.
- Garnish it with some mint leaves, olive oil and freshly ground pepper.
