
Background
This simple peach salsa is perfect for summer barbecues, parties and picnics! It goes really well with grilled fish and even kids love it (without chilli). You can make it with nectarine too.
Ingredients
- I ripe peach
- 1 large tomato
- juice of 1 lime
- 1 Tbsp olive oil
- 1 handful of coriander leaves, chopped
- 1 red chilli (optional)
Instructions
- Cut the tomato and peach flesh into small cubes.
- If used, deseed the chilli, remove the vein and finely chop the flesh.
- Finely slice the spring onion.
- Combine everything together, season with salt and pepper.
