Pear, walnut and gorgonzola salad

Background
This pear, walnut and gorgonzola salad is a lovely and easy lunch or starter in the autumn. Serve it with wholesome bread or oat biscuits.
Ingredients
- 2 pears
- 3 Tbsp freshly squeezed apple juice
- 2 Tbsp olive oil
- 2 Tbsp chopped chives
- 100g walnuts
- 100g watercress or rocket (arugula) leaves
- 150g gorgonzola
- Salt and pepper
Instructions
- Mix the apple juice with the oil and the chopped chives. Season with salt and pepper.
- Peel and core the pears, then slice them thinly. Drizzle the dressing on top of them.
- In a saucepan fry the walnut kernels without oil, until aromatic. Set aside then chop roughly.
- Rinse the watercress leaves and drain thoroughly.
- Sprinkle the leaves on plates, arrange the pear slices, then sprinkle the walnut and crumble the cheese on top. Drizzle the dressing over.
