Pecan and coconut cereal bar
Background
Cereal bars are very popular these days - but the shop-bought ones are loaded with sugar! It’s actually very easy to make them , and you can adjust the sugar, gluten and dairy content to your liking or requirement. This pecan and coconut cereal bar is a perfect example, which goes really well with a cup of tea or coffee.
Ingredients
- 100g golden syrup
- 100g cane sugar (brown)
- 100g butter or dairy-free spread
- 200g rolled oats (jumbo)
- 50g pecans
- 100g dates, chopped
- 100g mixed seeds (sesame, sunflower, pumpkin)
- 50g desiccated coconut
- ½ tsp ground cinnamon
- A pinch of salt
Instructions
- Preheat the oven to 150°C.
- Grease and line a 22 cm square baking tin.
- Melt the butter/spread with the syrup and sugar over low heat. Let it cool a bit.
- Put the rest of the ingredients in a large bowl then pour over the syrup and combine well.
- Spoon the mixture into the baking tin and spread it out evenly, pressing it down lightly with the of the base spoon.
- Bake for 25-30 minutes.
- Let it cool in the tin for 5 minutes then move to a wire rack.
- When it’s completely cool, slice it into cubes or bars.
