Background
I make pizza once a week for my family and I always mix my own pizza sauce as the shop- bought ones are full of additives or far too expensive. This pizza sauce with sun-dried tomatoes is one my favourite mixtures – it’s ready in just 5 minutes. Also, it doesn’t burn easily on the dough as it has little sugar (only from the ketchup). You can make it with fresh or dried herbs. The recipe is enough for a jar, which can be used on pizzas, bruschettas, puff tarts & nibbles.
Ingredients
- 2 plum tomatoes (from tin)
- 2 tbsp ketchup
- 2 tbsp tomato puree
- 1 clove of garlic, roughly chopped
- 1 small red onion or shallot
- 1 tbsp roughly chopped parsley or basil
- Or 1 tsp dried marjoram/oregano
- 4 medium pieces of sundried tomatoes
- ½ tsp chilli sauce or chilli flakes (optional)
Instructions
- Take out 2 tomatoes from the tin (but not the juice). Put these in a food processor.
- Add all other ingredients and whizz until you get a paste - the texture is up to you, I like mine coarse, not too smooth. Taste it and season with salt and pepper to your liking. Add more chilli sauce/flakes if you want it spicy.
- Use the sauce immediately or spoon it into a sterilised jar.
- Keep the leftover or the jar refrigerated.
