Pork and potato stew

Background
This pork and potato stew is a super easy one pot dish, so you don’t have to do much! Although it takes some time to cook, you can leave the dish in the oven and you can get on with other things or just relax!
Ingredients
- 500g stewing pork, cubed
- 500g new potatoes
- 2 Tbsp olive oil
- 1 Tbsp cornflour
- 1 onion, sliced
- 2 carrots, roughly chopped
- 2 sticks celery, roughly chopped
- 2 garlic cloves, sliced
- 1 tsp fresh thyme leaves, chopped
- 1 tsp rosemary leaves, chopped
- 50 ml white wine
- 6 ripe tomatoes
- 1 bay leaf
- 1 chicken stock cube
- 1 mushroom stock cube
- Fresh chopped parsley leaves, to serve
Instructions
- Preheat the oven to 160°C.
- Thinly slice the onion and cut the carrots into chunks. Dice the tomatoes. Cut the potatoes into bite-sized chunks.
- Heat half the olive oil in a heavy based casserole dish. Dust the pork with the cornflour. Add the pork to the pan and brown on all sides, then transfer them to a plate.
- Add the remaining olive oil to the pan, then the onion and celery. Stir for about 5 minutes, until the onion has softened, then add the garlic and herbs. Stir for a minute then add the pork and white wine. Let it reduce then add chopped tomatoes, carrots, potatoes and bay leaf. Pour in some boiling water, enough to just cover the pork & veggies.
- Crumble the stock cube into the stew, season with pepper (and chilli flakes, if liked) then cover and cook in the oven for 90-100 minutes.
- Serve with chopped parsley scattered on top.
