Pork belly, potatoes and beans traybake

Background
If you’re after an easy family meal why don’t you try this Mexican-style pork belly, potatoes and beans traybake? You could marinate or even partially bake the pork belly ahead, then it only takes 20 minutes to do the rest. Serve it with a crispy salad.
Ingredients
- 500g pork belly slices
- 450g potatoes
- 2 red onions
- 1 red bell pepper
- 1 cup baby tomatoes
- 1 tin black beans, drained
- To serve: 2 Tbsp chopped parsley or coriander, chopped avocado (optional), sour cream (optional)
- For the marinade:
- 1 Tbsp olive oil
- 2 Tbsp tomato pure
- Juice of 1 lime
- 2 cloves of garlic, minced
- 1 tsp smoked paprika
- Pinches of cayenne, to taste
- 1 tsp dried oregano
- 1 tsp ground cumin
- 1 tsp ground peppercorn
- 1 tsp salt
Instructions
- First, mix the marinade. Put the pork slices in a shallow baking tray and brush them with this paste, then rest the tray in the fridge for about an hour, or even overnight.
- Preheat the oven to 170°C. Cover the tray with foil and bake the pork belly for 30 minutes in the middle of the oven.
- Meanwhile, cook the potatoes in a pan of water, then rinse and peel them. Let them cool and cut them into 1 cm thick slices.
- Cut the onions into rings or thin wedges. Slice the bell pepper. Cut the tomatoes in half.
- Line another, bigger & deeper baking dish with the potatoes, red pepper and onion slices, loosely overlapping each other. Brush them with the remaining spiced tomato paste.
- Put the pork belly slices on top and pour over the cooking juices from the other tray.
- Turn up the oven temperature to 190C and bake for 10-15 minutes, until the pork is golden.
- Take the tray out and scatter the tomatoes & beans over the potatoes and mix well.
- Turn over the pork slices and bake for another 10-15 minutes, until the potatoes and meat look golden brown.
- Scatter some chopped parsley or coriander leaves on top and serve.
- You can add some chopped avocado or sour cream just before serving.
