Pork loin and beans in tomato sauce

Background
Pork loin and beans in tomato sauce is a an easy recipe, particularly if you make the tomato sauce ahead which can be refrigerated for up to 3 days. Then it only takes about 20 minutes to make the dish. Serve it with a mash or rice.
Ingredients
- 1 pork loin about 4
- 1 tin cannellini beans
- 1 cup chopped cavolo nero
- 1 Tbsp olive oil
- 2 Tbsp balsamic vinegar
- Fort he tomato sauce:
- 1 onion
- 2 celery
- 2 cloves of garlic
- 1 medium carrot
- ½ red bell pepper
- 1 tsp Italian mixed herbs
- 1 pinch chilli
- 1 Tbsp sundried tomato purée
- 1 tin tomatoes or 1 cup chopped fresh tomatoes
- 1 chicken stock cube
- 1 bunch basil
Instructions
- First make the tomato sauce:
- Chop the garlic, onion, celery, carrot and red pepper.
- Heat the oil in a frying pan and add the chopped veggies.
- Cook gently over low heat for 10 minutes.
- Add the mixed spices and chilli, stir for a few seconds, then add tomato purée.
- After stirring for a few seconds, add the tinned tomatoes, and using the tin, enough water to cover a veggies. Add the stock cube and bring to the boil.
- Gently simmer for 20-25 minutes.
- Turn off the heat and add the basil.
- Using a stick blender process the stew until you get a thick sauce.
- This can be refrigerated for up to 3 days or frozen.
- When you’re ready to make the dish, cut the pork loin into 1 cm thick escallops.
- Heat the oil and brown the meat on both sides for about 3 minutes. Add the balsamic and let it sizzle for a minute or so.
- Pour over the tomato sauce and cook for 10 minutes over low heat.
- Add the chopped cavolo nero and the drained beans. Cook for another 5-10 minutes.
- Serve warm.
