Pork & Pineapple Stir Fry
Background
I love using a wok! If you haven't got one yet, buy one! So many people are put off cooking their own Chinese dishes because they think they're too complicated or need exotic ingredients which they won't have. This pork & pineapple dish proves them wrong on the first because it's really easy and quick. As to exotic ingredients the only ones you might not have in the cupboard, but can easily find in your local supermarket, are soy sauce (both light & dark) and sesame oil.
Ingredients
- 500g pork tenderloin (fillet)
- 2 Tbsp groundnut oil
- 4 cloves garlic - roughly chopped
- 150g leek - thinly sliced
- 200g fresh pineapple chopped
- 1 handful fresh coriander finely chopped
- 1 Tbsp dark soy sauce
- 1 tsp sugar
- For the Marinade:
- 1 Tbsp light soy sauce
- 1 Tbsp dry sherry
- 1 tsp sesame oil
- 2 tsp cornflower
Instructions
- Cut the pork into 5 cm long strips - less than 1 cm wide
- Mix together the marinade ingredients in a bowl then add the pork and stir it well to coat all the strips. Leave for about 10 minutes while you prepare the other ingredients.
- Heat the wok on a high heat and, when it's good and hot, add the groundnut oil.
- Add the garlic & leek, stir-fry for Β½ minute, then add the pork and stir-fry for about 3 minutes.
- Add the remaining ingredients and continue stir-frying for another 3 minutes
- Garnish with some more coriander or other green herb, if you like, and serve with boiled rice.
