Pork ribs baked in spiced coconut milk
Background
If you like Thai flavours, these pork ribs baked in spiced coconut milk tick all the boxes β easy to make, super yummy, a bit spicy and really filling. Perfect for dinner parties too, as the dish can be pre-baked and the grilling (the last phase ) only takes 10-15 minutes. Serve it with jasmine rice and stir-fried veggies.
Ingredients
- 8 pork spare ribs
- 1 lime, sliced
- Β½ tin coconut milk
- 1 Tbsp soy sauce
- 1 Tbsp fish sauce (optional)
- 2 kaffir lime leaves
- 1 chilli, sliced
- 1 inch ginger, grated
- 2 cloves of garlic, minced
- 1 lemongrass, chopped
- 4 spring onions, chopped
- 2 Tbsp chopped coriander leaves
Instructions
- Place the lime slices in a shallow baking dish, then put the spare ribs on top.
- In a bowl, mix all other ingredients, except the coriander leaves, then pour this mixture over the ribs, coating them well. Cover the dish with foil, then marinate for at least 2 hours or even overnight.
- Preheat the oven to 160Β°C. Put the dish in the middle of the oven (covered) and bake for about 2 hours. Turn over the ribs at least once.
- Take off the foil, turn the oven to the grill setting and brown the pork on each side - this should take about 15 minutes.
- Serve the ribs with rice and the sauce (strained). Scatter the coriander leaves on top.
