Porridge with honey glazed figs and pistachios
Background
This porridge with honey glazed figs and pistachios is a special recipe, it has a middle-Eastern twist. Itβs ideal for a celebratory breakfast or brunch, but you could serve it as pudding too. Use gluten-free oats, if needed, and plant-based milk & yoghurt for a vegan version. If you have organic orange, you can add some grated orange zest to the porridge, if liked.
Ingredients
- 60g rolled porridge oats
- 1 tsp cinnamon (optional)
- 350 ml almond or hazelnut milk
- 2 Tbsp orange blossom honey
- 3 Tbsp orange juice
- 4 figs
- Β½ cup pistachio kernels
- Vanilla yogurt (plant-based, if needed)
Instructions
- Put the porridge in a saucepan and add the cinnamon, if used. Mix together, then add the almond milk. Turn the heat on, and simmer over low heat for 10 minutes. It should be creamy, so add a little more milk, if needed. Turn off the heat, give it a stir, then put a lid on and rest for 5 minutes.
- Meanwhile cut each fig into 4 wedges.
- Put the orange juice and honey in a small saucepan and bring to the boil. Cook over low heat until you get bubble on the surface and itβs syrupy. Add the figs and coat them well. After a minute add the pistachios and coat them well too. Turn off the heat.
- Spoon the porridge into two bowls, then add some vanilla yogurt and mix well.
- Top with the glazed figs and pistachios. Drizzle with the syrup and serve.
