Background
This potato and frankfurter bake is ideal for an easy family meal. You can use leftovers - such as boiled potatoes, or pasta sauce. It is gluten-free, dairy-free, egg-free and nut-free too. If dairy is not an issue for, you can add some grated cheese as the top layer. Serve it with gherkins or a mixed green salad.
Ingredients
- 6 potatoes
- 1 clove of garlic
- Olive oil
- 8 frankfurters
- 1 cup green beans or peas
- 1 handful olives
- 2 cups ready-made or leftover tomato sauce with herbs
- 1 handful spinach or kale
- Grated cheese (optional)
Instructions
- Cook the potatoes in a pan of slightly salted water, drain and let them cool.
- When cooled, cut them into thin slices.
- Cut the frankfurters into small pieces.
- Grease a deep baking dish and add a layer of potatoes. Scatter some beans/peas, olives, frankfurters and some spinach leaves on top, then spoon half the tomato sauce to cover the veggies well. Season with plenty of ground pepper.
- Repeat the layering, finishing off with the tomato sauce or cheese, if used.
- Chill until you’re ready to bake.
- Preheat the oven for 180°C then bake for about 25 minutes or until the top is golden.
- Serve warm.
