Potato and ham bake
Background
This potato and ham bake is ideal for using up leftovers - such as boiled potatoes, roasted ham or pasta sauce. Also, you can prepare it in advance and bake it just before serving, making this dish ideal for a midweek family meal. It is gluten-free, egg-free and nut-free. If you're using organic potatoes, you don't need to peel them. Serve the dish with coleslaw, gherkins or a crunchy green salad.
Ingredients
- 6 medium potatoes
- 1 clove of garlic
- Olive oil
- 4 thick slices of ham or leftover gammon
- 1 cup green beans or peas
- 1 handful olives
- 2 cups ready-made or leftover tomato sauce with herbs
- 1 handful spinach
- Feta or goat’s cheese
Instructions
- Cook the potatoes in a pan of water, drain and let them cool.When cool, cut them into thin slices.
- Grease a deep baking dish and add a layer of potatoes. Cover the potatoes with two slices of ham. Scatter some peas, olives and spinach leaves over the ham, then spoon evenly half of the tomato sauce on top and crumble some cheese over the sauce. Season with plenty of ground pepper.
- Repeat the layering, finishing off with the cheese.
- Chill until you’re ready to bake.
- Preheat the oven for 180°C then bake the dish for about 20-25 minutes or until the top is golden.
- Serve warm.
