Potato and crayfish gratin
Background
This potato and crayfish gratin is lovely and easy dish for special occasions, such as anniversaries, mother’s day or Valentines’ day. It’s ideal for dinner parties too as you can prepare most of it well in advance, only the baking needs to be done just before your guest arrive. Also, it’s an ideal dish to use up leftover baked potatoes and/or boiled eggs. You can make it in one dish or individual portions, using little ramekins or other kind of mini ceramic dishes.
Ingredients
- 125g crayfish
- 150 ml crème fraîche
- 2 baked or boiled potatoes
- 3 large or 4 small boiled eggs
- 1 Tbsp chopped dill or chives
- 2 knobs of butter
- Juice and zest of ½ lemon
- Couple of pinches of cayenne or paprika or nutmeg
- 100g spinach (optional)
- Grated Emmental or Gruyere cheese
Instructions
- Preheat the oven to 180°C.
- Grease a medium, deep oven-proof dish with butter or oil.
- Cut the pre-cooked potatoes into 5mm rings (leave the skin on, if using organic potatoes, otherwise peel them first).
- Layer the bottom of a greased ovenproof dish with the potatoes. Season with a little salt.
- Mix the crayfish tails with half of the crème fraîche, chives, lemon zest and juice. Add some cayenne to your liking ( or a pinch of paprika/nutmeg).
- Shell the eggs and cut them into thin rings. If using spinach, pour over it some boiling water, squeeze out the water and shred. Scatter on top of the potatoes.
- Spoon the crayfish mixture on top of the potatoes speeding them out evenly. Layer the egg on top.
- Now cover the eggs with the leftover potatoes, season with salt and pepper and spoon over the remaining crème fraîche, spreading it out evenly to cover all of the potatoes. Sprinkle with a pinch of cayenne or paprika.
- Grate some cheese on top to your liking then bake for about 20-30 minutes until the top is golden and gooey.
- Serve with a green salad.
