Potato salad with gherkin

Background
This potato salad with gherkin is perfect for summer barbecues, parties and picnics. It can be prepared in advance, served warm or cold. It goes particularly well with grilled lamb or beef steak.
Ingredients
- 750g new potatoes
- 1 Tbsp cider vinegar
- 3 Tbsp olive oil
- 1 tsp grainy mustard
- 1 garlic, minced
- 1 pinch of unrefined sugar
- 2 Tbsp drained capers (in vinegar )
- 1 red onion
- 3 medium gherkins
- 1 Tbsp chopped parsley
Instructions
- Rub the potatoes well, then cook them in salted water until tender.
- Mix the vinegar, oil, sugar, mustard and garlic.
- Drain the potatoes, cut in half the larger pieces. Put them in a serving dish and toss with the dressing.
- Cut the gherkins into small cubes, thinly slice the onion and add to the potatoes together with the capers.
- Taste and, if needed, season with salt & pepper.
- Sprinkle with parsley.
