Potato salad with olives and gherkins

Background
This potato salad with olives and gherkins is a lovely dish for lunch or you can serve it as a side dish with grilled meat/fish. Itβs super easy to make, healthy and yummy.
Ingredients
- 750g organic new potatoes
- 2 cloves of garlic, minced
- 1/2 red chilli, optional
- 3 Tbsp olive oil
- 1 Tbsp apple cider vinegar
- 1 pinch dried oregano or marjoram
- 1 bunch spring onions
- 4 gherkins
- Β½ cup pitted olives, drained
- 2 Tbsp chopped parsley or dill, basil etc
- Salt& pepper
Instructions
- Cut the potatoes into bite-sized pieces and put them in a pan of lightly salted water.
- Bring to the boil, then gently simmer for 10-15 minutes until tender.
- Meanwhile, in a mixing bowl whisk the oil, garlic, marjoram and vinegar. Taste and adjust the acidity. Chop the gherkins, chilli (if used) and spring onion, add them to the dressing. Add the olives and set aside.
- When the potatoes are done, drain and add them to the bowl. Season with salt and pepper, then gently combine.
- Add the chopped fresh herb of your choice, toss and serve warm or let it cool and serve later.
