Indian Potato Stew

Background
Indian Potato stew is very tasty and easy to make. This recipe is very famous and popular in Kerala. It's vegetarian, but the potato can be replaced with chicken or mutton if you wish. It goes very well with appam (pancakes) or roti.
Ingredients
- 2 Medium potatoes (cubed)
- 1 Onion (Sliced length wise)
- 1" Ginger (grated)
- ¼ tsp Pepper powder
- 1 Green chilli
- Salt as required
- ¼ Grated coconut
- 1 tsp Oil
- 1 tsp Cumin seeds
Instructions
- Grind together coconut and cumin seeds to a smooth paste adding a little water.
- In a pressure cooker, heat oil and add the onions and fry until they are transparent.
- Add ginger, pepper powder and green chilli mix for a minute.
- Add the cubed potatoes and add enough water and pressure cook them.
- Add the coconut paste to the boiled potatoes and boil for a few minutes.
- Serve hot with appam or roti.
