Potatoes and beans in tomato sauce

Background
You can use any ready-cooked tomato sauce for this recipe. I made it with tomato and vegetables sauce - which had aubergine, courgette, bell pepper and carrot, so it’s very nutritious and vegan. These recipes are all suitable for these potatoes and beans in tomato sauce:
- Roasted tomato sauce
- Homemade tomato pasta sauce
- Roasted tomato and aubergine sauce
- Homemade spiced tomato sauce
- Tomato and courgette pasta sauce
Ingredients
- 500g new potatoes
- 1 tin black beans
- 400 ml ready cooked tomato sauce
- 1 cup vegetable stock
- Fresh parsley or coriander
Instructions
- Rinse the potatoes and put them in a pan of lightly salted water. Bring the boil, then cook for approx. 15 minutes, or until tender. Drain, then cut them in half.
- Meanwhile, heat the tomato sauce in another pan, add the stock and drained beans. Bring to the boil, then add the potatoes. Combine well and add more stock, if the sauce is too thick - you should have a thick stew, not a soup though.
- Serve with chopped herbs.
