Prawns, red pepper and spinach stir-fry

Background
If you're after a pretty simple yet tasty dish for supper or lunch, this prawns, spinach and pepper stir-fry will be an excellent choice! It's ready within ten minutes - Β then serve it with Jasmine rice or noodles.
Ingredients
- 1 Tbsp groundnut or sunflower oil
- 1 garlic clove
- 2 cm piece of ginger
- 1 small red pepper
- 1 chilli (optional)
- 150g pack raw peeled king prawns
- 1 Tbsp soy sauce
- 1 tsp Thai fish sauce
- 2 large handfuls of baby spinach leaves
- To serve: lime juice
Instructions
- Finely slice the garlic and ginger. If used, deseed the chilli, then finely chop it.
- Finely slice the red pepper.
- Heat a wok until it's really hot. Add the oil, and a few seconds later, the garlic, ginger and chilli.. Stir-fry for 30 seconds, then add the pepper and stir-dry for 2 minutes.
- Add the prawns, stir-dry for 2-3 minutes until they change colour. Add the soy or fish sauce.
- Stir in the in the spinach, stir-fry for a minute or so until the spinach starts to wilt.
- Serve immediately.
