Background
Prunes wrapped in crispy bacon is a classic sweet & savoury combination - indeed, a classic French appetizer. They go so well with a glass of bubbly, so these little examples of what the English call devils on horseback are perfect nibbles at drinks parties.
Ingredients
- 12 strips of streaky bacon (thin)
- 24 soft-dried prunes, pitted
- Almonds (optional, see tips)
Instructions
- Preheat the oven to 200°C.
- Cut the bacon into halves if they're too long.
- Place a prune at one end of the bacon strip and roll it up, wrapping the prune tightly. Push a toothpick through the middle of the wrapped prune roll to secure. Repeat with the rest of the prunes and bacon.
- Place them on a non-stick or lined baking tray and bake for 10-15 minutes, turning over halfway through cooking, until the bacon is crispy on all sides.
- Serve warm or cool.
Tips
- Try stuffing the prunes with toasted almond before wrapping them in the bacon.
- Or soaking the prunes in brandy or mulled wine half an hour before wrapping.
- You can use pancetta instead of bacon.
- You can add a sage of bay leaf to the wrap.
