Puff pastry cottage cheese envelopes
Background
Curd cheese stuffed pastry is popular all over Eastern-Europe, which has savoury and sweet versions. Itβs normally made with a yeasty dough, similar to bread so the proofing takes at least an hour. If you canβt wait that long, shortcrust or puff pastry can be substituted like in the case of these puff pastry cottage cheese envelopes. They are just as yummy as the authentic version! Β But make sure you use curd cheese which can be bought in Polish delis and larger supermarket, called TwarΓ³g.
Ingredients
- 150g curd cheese
- 1 egg, separated
- 1 ready rolled puff pastry
- 3 Tbsp sugar
- 1 tsp vanilla extract
- 1 Tbsp semolina
- 1 Tbsp soft butter
- Β½ lemon zested
- Raisins (optional)
Instructions
- Preheat the oven to 170Β°C.
- Separate the egg.
- Mix the cottage cheese with the egg yolk, vanilla, sugar, butter, lemon zest and raisins. Fold in the semolina.
- In another bowl, whisk the egg white until stiff. Fold this into the cottage cheese mixture together with the raisins.
- Unroll the pastry, then cut out 6 squares.
- Spoon some mixture into the middle of each square then starting from the corners fold the pastry into the middle, making an envelope shape.
- You can overlap the meeting edges if you want a closed, parcel like result or just let them cover the cottage cheese (the pastry will open up during baking).
- Put the envelops onto a baking sheet, lined with parchment paper, then brush them with the egg (optional), then bake for 15-20 minutes until golden.
- Transfer them to a wire-rack.
- When cooled, dust them with icing sugar and serve.
