Puy lentil with chorizo
Background
For a quick & easy lunch or supper I highly recommend this dish, made with ready-cooked puy lentil with chorizo, as it takes 10 minutes to create. Serve it with crusty or flat bread and a green salad -Β I mixed it together with some leftover steamed brown rice, it was absolutely delicious! If you donβt have ready-cooked, vacuum-packed puy lentils, just cook a cupful of dried lentils, following the packet instructions - then follow this recipe.
Ingredients
- 250g ready cooked puy lentils
- 100g cooking chorizo
- 2 shallots
- Β½ red pepper
- 2 tsp sherry vinegar
- 1 Tbsp chopped parsley
- Feta or goat cheese (optional)
Instructions
- Slice the chorizo and the shallots, dice the red pepper.
- Put all in a frying pan, then heat the pan over medium heat, letting the fat release gently from the chorizo.
- Cook until the onion is soft, the chorizo is crispy (but not burnt).
- Add the lentils & vinegar and stir until warmed through.
- Stir in the parsley and season with salt and pepper to taste.
- Just before serving you can crumble some feta or goatβs cheese on top if you like.
