Background
LahmacunΒ are Turkish flatbreads topped with a with a saucy blend of lamb, tomatoes and spices. They're similar to pides, known as Turkish pizzas, but the base is thinner. These lahmacun are a bit of a cheatΒ -Β using ready-made flatbread and Harissa paste. Each can be cooked in just 8 minutes.
Ingredients
- 250g minced lamb
- 2 ripe tomatoes
- 1 onion
- 1 handful of parsley
- 2 Tbsp Harissa paste or tomato purée
- 1 tsp ground cumin
- Couple of pinches of cinnamon powder
- 2 Tbsp olive oil
- 4-6 flatbreads
- Lemon wedges
Instructions
- Preheat the oven to 200°C. Heat a baking tray or pizza stone.
- Finely chop the onion, tomatoes and the parsley. Put these in a bowl and mix with the lamb, oil and Harissa. Keep back some of the parsley. Season to taste.
- Put a flatbread on the hot baking tray and spread about 3-4 Tbsp of the mixture over it. Cook for about 8 minutes until the flatbread is golden and crispy. Then bake the other ones.
- Serve with the remaining parsley scattered on top and some lemon juice squeezed over it - then fold in half.
Tips
- If you don't have Harissa, just mix chopped chilli or chilli flakes with tomato purée.
- You can make your own base by mixing 600g flour, 300 ml water, 50 ml olive oil and 1 packet of instants yeast. Kneed the dough and rest for an hour. Then tear off little balls and roll these out into 20 cm diameter and 2-3mm thick disks. Spread the lamb mixture on top and bake.
