Background
This quick & easy green pea soup is one my favourite recipes because it's ready in 10 minutes and is absolutely delicious. I've made it with rocket too which is also yummy. It would also fit in a dinner menu during the summer (as a starter). Serve it with fresh, wholesome bread, blinis or scones.
Ingredients
- 2 cups peas ( frozen or fresh )
- About 1 cup chicken or vegetable stock
- 2 handfuls of watercress
- Freshly squeezed lemon juice
Instructions
- Put the peas in a saucepan, then pour over enough stock to cover. Bring to the boil, then cook for 3 minutes.
- Add the watercress and, using a hand blender, whiz until creamy.
- Season to taste, squeeze a drop of lemon juice into it.
- Serve warm with a little olive oil drizzled on top.
