Quick and Easy Sticky Gammon

Background
This Quick & Easy Sticky Gammon recipe is my variation on a classic slow-cooked version I saw on TV. They both taste wonderful but this one is ready in less than 2 hours rather than 4 or 5 hours using the slow method. The secret is to do most of the cooking in a pressure cooker.
Ingredients
- Pressure cooker: 600 ml pineapple juice
- 2-2½ kg gammon (preferably smoked)
- Roasting Sauce: 600 ml pineapple juice
- 2 Tbsp tomato ketchup
- 80g black treacle
- 2 Tbsp clear honey
- 80g ginger (chopped into chunks)
- 2 tsp ground allspice
- 2 Tbsp sweet chilli sauce
Instructions
- Put the 600 ml of pineapple juice and the gammon into the pressure cook and bring to the boil.
- Put on the lid and bring up to pressure. Cook for 1 hour and allow to cool by itself.
- Roasting Sauce: Mix all the other ingredients together with a hand blender. Pre-heat oven to 180°C.
- Take the gammon from the pressure cooker (discard the cooking liquid) and put into a roasting tin.
- Remove the skin and most of the fat, but leave a thin layer.
- Pour the sauce over all the joint then pop it into the oven for 20 minutes until nicely browned all over.
- Serve with the sauce poured over and the vegetables of your choice. Enjoy!
